Thaw cinnamon rolls covered, either at room temp. 30-60 minutes until flexible or refrigerated overnight.
Filing
Add frozen blueberries, sugar, flour, lemon zest and dried lavender to a large bowl; stir together.
Transfer mixture to a greased, 1/2 hotel pan and bake until filling boils for a few minutes.

*Rotate pans baked in convection oven one-half turn (180°) after 15 minutes of baking.
Assembly
Cut each thawed cinnamon rolls into 4 pieces; place evenly on warm Filling.
Sprinkle coarse sugar evenly over top and bake until golden brown.
Serve warm using #8 scoop filling and 2 pieces of cinnamon rolls per portion.
